The 2018 Donnafugata Millesimato Rose is an elegant Metodo Classico sparkling wine made from 100 percent Pinot Nero grapes grown at high altitudes on the Contessa Entellina estate in Sicily. It features an antique pink color and a sophisticated bouquet with tertiary notes of bread crust alongside delicate fruity hints of pink grapefruit, wild strawberries, and peach. After aging for 36 months on the lees, the palate reveals a fresh and vibrant structure with a savory vein and long persistence. This refined rose pairs excellently with raw or cooked crustaceans, fish tartare, and thinly sliced prosciutto crudo.
