The Ministry of Clouds McLaren Vale Mataro is a bright but deep expression of the variety, primarily sourced from a sloping Blewitt Springs vineyard with deep wind-blown sand. Hand-picked and fermented in open vessels before maturing in old French oak barriques, this red wine reveals a complex nose of clove, cardamom, fennel seeds, and dark plummy fruit. On the palate, it features a compact core of blue and black fruits supported by creamy oak and a ferruginous tannin structure. Often described as shy and brooding yet sophisticated, it is a vegan-friendly wine that pairs exceptionally well with grilled meats like Italian pork sausages or spiced steak. With its robust tannins and savoury profile, it is ideally served at 16 degrees Celsius and can be cellared for up to 12 years.
